Pork Tenderloin Fillet
Pork tenderloin is sweet and one of the leanest pork cuts available. It’s really easy to cook, just score the top of the meat and sear in a pre-heated oven at 220C before lowering the temperature and letting it cook through for a further 15 minutes. As it’s so lean, be careful not to over-cook as it will dry out. Try coating the loin fillet in a crust of salt, pepper, sage and mustard.
