True to our “nose to tail use “of an animal we sell oxtail. It is skinned and cut into short lengths for cooking.

They basically taste just like stewing beef. However, because of the extra fat, gelatine, they produce an incredibly rich stock or stew and the meat, when stewed, has a better texture than most beef.

It’s a super-delicious cut of meat that just needs a bit of TLC.
