This is the grandest of roasting joints and one of our prized flagship cuts.

Cut from the fore quarter this mouth-watering joint is full of fantastic marbling and intense flavour. We recommend weighing the joint and calculating the cooking time at 12 minutes per 500gm for rare, 15mins per 500gm for medium rare and 18 mins per 500gm for medium. Make sure to allow the meat to get to room temperature before cooking and allow it to rest after cooking for a min of 20 minutes before carving it keeping it as tender and juicy as possible.
